Egg Foo Young (Print Version)

# Ingredients:

01 - 8 large eggs, lightly beaten.
02 - 1/2 red bell pepper, finely chopped.
03 - 1 celery stalk, thinly sliced.
04 - 1/2 cup mushrooms, finely chopped.
05 - 1/2 onion, finely chopped.
06 - 1/2 cup fresh bean sprouts, chopped.
07 - 4 green onions, chopped (white and green parts separated).
08 - 1/2 teaspoon kosher salt.
09 - 1/4 teaspoon white pepper.
10 - 1 cup cooked chicken, finely diced.
11 - 3 tablespoons canola oil.
12 - 1 1/4 cups chicken broth (for gravy).
13 - 3 tablespoons soy sauce.
14 - 1 tablespoon rice vinegar.
15 - 2 teaspoons brown sugar.
16 - 1 teaspoon sesame oil.
17 - 2 tablespoons cornstarch.
18 - 3 tablespoons cold water.

# Instructions:

01 - Combine broth, soy sauce, vinegar, sugar and sesame oil in saucepan. Heat and whisk in cornstarch slurry until thickened.
02 - Whisk eggs and mix in vegetables, chicken, salt and pepper.
03 - Heat oil and cook 1/2 cup portions of egg mixture 2-3 minutes per side until golden.
04 - Top egg patties with gravy and garnish with remaining green onions.

# Notes:

01 - Can be made gluten-free using tamari.
02 - Rotisserie chicken recommended.
