Cheesy Beef Bowtie Pasta (Print Version)

# Ingredients:

01 - 12 oz bowtie pasta.
02 - 1 lb ground beef.
03 - 2 tablespoons olive oil.
04 - 1 small onion, chopped.
05 - 4 cloves garlic, minced (divided).
06 - 1 teaspoon Italian seasoning.
07 - 1/2 teaspoon red pepper flakes.
08 - 3 tablespoons unsalted butter.
09 - 1 tablespoon all-purpose flour.
10 - 1 cup milk.
11 - 1 cup shredded mozzarella.
12 - 1/2 cup grated Parmesan.
13 - 2 tablespoons fresh parsley.
14 - Salt and pepper to taste.

# Instructions:

01 - Boil pasta until al dente. Reserve 1/2 cup water before draining.
02 - Brown beef with oil. Add onion, garlic, and seasonings. Cook until onions soften. Set aside.
03 - Melt butter, cook garlic. Add flour to make roux. Whisk in milk until thickened.
04 - Stir in cheeses until melted. Add pasta and beef mixture. Use pasta water if needed to thin sauce.
05 - Garnish with parsley and extra Parmesan if desired.
