Bacon Cheeseburger Soup (Print Version)

# Ingredients:

01 - 5.33 slices bacon.
02 - 1 pound ground beef.
03 - 1.33 tablespoons cooking oil.
04 - 0.67 yellow onion.
05 - 1.33 cups diced yukon gold potatoes, peeled.
06 - 0.67 14oz can diced tomatoes.
07 - 0.67 teaspoon sea salt.
08 - 0.33 teaspoon black pepper.
09 - 2.67 cups beef broth.
10 - 0.67 cup raw cashews.
11 - 0.33 cup water or chicken broth.
12 - 0.17 cup nutritional yeast.
13 - 1.33 tablespoons pickle juice.
14 - 0.67 tablespoon tomato paste.
15 - 1.33 teaspoons yellow mustard.
16 - 1.33 pickles, diced (optional).
17 - 0.67 cup shredded lettuce (optional).

# Instructions:

01 - Cook bacon until crispy using preferred method. Set aside to cool, then crumble.
02 - In large pot, cook ground beef in bacon fat or oil until no longer pink. Drain and set aside.
03 - Saute onion and potatoes 5-7 minutes. Add tomatoes, seasonings, and broth. Simmer 10 minutes.
04 - Blend soaked cashews with water, pickle juice, nutritional yeast, tomato paste and mustard until smooth.
05 - Add beef and cashew sauce to vegetables. Cook 2-3 minutes more. Top with bacon and garnishes.
