In a large pot, add the olive oil and heat it over medium heat. Once hot, add the chopped onion and diced carrots. Sauté them for about 5 to 7 minutes, stirring occasionally, until the onion is soft and translucent.

Carefully remove the chicken from the pot and shred it using two forks. This makes it nice and tender for the soup. Return the shredded chicken back into the pot with the rest of the soup.
