Tender Braised Oxtail (Print Version)

# Ingredients:

01 - 1 kg oxtail.
02 - 1 red onion, diced.
03 - 1/4 cup cilantro stems.
04 - 1/2 teaspoon dried thyme or 4 sprigs fresh.
05 - 1 tablespoon minced ginger.
06 - 1 tablespoon minced garlic.
07 - 2 tablespoons tomato paste.
08 - 1 large tomato, diced.
09 - 1 tablespoon brown sugar.
10 - 2 tablespoons curry powder.
11 - 1 tablespoon smoked paprika.
12 - 1 tablespoon onion powder.
13 - 1 tablespoon garlic powder.
14 - 1 tablespoon coriander powder.
15 - 1 teaspoon cumin.
16 - 2 bay leaves.
17 - Chillies to taste.
18 - Salt to taste.
19 - Vegetable oil for cooking.

# Instructions:

01 - Sear oxtail until browned and golden. Set aside.
02 - In same pot, sauté onion, garlic, ginger, thyme and cilantro stems until softened.
03 - Add tomatoes, tomato paste, bay leaves and all spices. Cook until thickened.
04 - Return oxtail to pot with water/stock. Simmer covered on low for 5 hours, adding liquid as needed.
05 - Remove bay leaves, garnish with cilantro leaves and serve.

# Notes:

01 - Choose similar sized oxtails with good meat content.
02 - Searing develops rich flavor.
03 - Keep sauce thick while cooking.
