Steak Bites on Loaded Potatoes (Print Version)

# Ingredients:

01 - 1 pound flank steak or sirloin, cubed.
02 - 1 tablespoon olive oil (for steak).
03 - 1 teaspoon garlic powder.
04 - 1 teaspoon smoked paprika.
05 - 1/2 teaspoon onion powder.
06 - 1 tablespoon fresh parsley, chopped.
07 - 4 large russet potatoes.
08 - 1 tablespoon olive oil (for potatoes).
09 - 1 cup shredded cheddar cheese.
10 - 1/2 cup sour cream.
11 - 1/4 cup green onions, chopped.
12 - 1/4 cup bacon bits (optional).
13 - 1/4 cup butter.
14 - Salt and pepper to taste.

# Instructions:

01 - Heat oven to 400°F. Rub potatoes with oil and salt, pierce with fork.
02 - Bake directly on oven rack for 45-60 minutes until tender.
03 - Season steak cubes with spices, cook in hot skillet 4-5 minutes until browned.
04 - Split potatoes, fluff insides. Add butter and mash slightly.
05 - Top potatoes with cheese, sour cream, green onions and optional bacon.
06 - Top with steak bites and garnish with parsley.
