Slow Cooker Chicken Cacciatore (Print Version)

# Ingredients:

01 - Bone-in, skin-on chicken thighs.
02 - Onions, sliced.
03 - Red and green bell peppers, sliced.
04 - Minced garlic.
05 - Crushed tomatoes (preferably San Marzano).
06 - Low-sodium chicken broth.
07 - Tomato paste.
08 - Dried oregano.
09 - Dried basil.
10 - Red pepper flakes (optional).
11 - Capers.
12 - Fresh parsley.
13 - Extra virgin olive oil.

# Instructions:

01 - Season chicken with salt and pepper. Brown in oil 4-5 minutes per side until golden.
02 - Add onions, peppers, and garlic to slow cooker. Place browned chicken on top.
03 - Combine tomatoes, broth, paste, and seasonings. Pour over chicken. Add capers.
04 - Cover and cook on low 6-7 hours or high 3-4 hours until chicken is tender.
05 - Garnish with fresh parsley before serving.

01 - Can add other vegetables like zucchini or mushrooms.
