Slow Cooker Garlic Butter Beef Bites (Print Version)

01 - 1 1/2 pounds beef stew meat, cut into bite-sized pieces
02 - 1 pound baby potatoes, halved
03 - 4 tablespoons unsalted butter, melted
04 - 3 cloves garlic, minced
05 - 1 teaspoon onion powder
06 - 1 teaspoon smoked paprika
07 - 1/2 teaspoon dried thyme
08 - 1/2 teaspoon dried rosemary
09 - 1/2 teaspoon salt (or to taste)
10 - 1/4 teaspoon black pepper
11 - 1/4 cup beef broth
12 - 1 tablespoon olive oil

# Instructions:

01 - Heat olive oil in skillet over medium-high heat. Sear beef bites until browned, about 2-3 minutes per side. Transfer to slow cooker.
02 - Add halved baby potatoes to the slow cooker.
03 - Mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper in a small bowl. Pour over beef and potatoes.
04 - Pour beef broth into the slow cooker.
05 - Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and potatoes are cooked through.
06 - Serve warm, garnished with fresh parsley if desired.

# Notes:

01 - Add heavy cream in last 30 minutes for extra richness
02 - Can substitute sweet potatoes or carrots for baby potatoes
03 - Searing beef can be skipped if short on time
