Cottage Cheese Breakfast Muffins (Print Version)

# Ingredients:

01 - 1 cup cottage cheese.
02 - 6 large eggs.
03 - 1/2 cup almond flour.
04 - 1/4 cup shredded cheddar cheese.
05 - 1/4 cup shredded mozzarella cheese.
06 - 1/2 cup spinach, chopped.
07 - 1/4 cup red bell pepper, diced.
08 - 1/4 cup green onions, chopped.
09 - 1/4 cup mushrooms, chopped.
10 - 1/2 teaspoon garlic powder.
11 - Salt and pepper to taste.
12 - 1 tablespoon olive oil.

# Instructions:

01 - Heat oven to 350°F. Grease muffin tin with olive oil.
02 - Whisk eggs and cottage cheese until smooth.
03 - Stir in almond flour and both cheeses.
04 - Fold in spinach, pepper, onions, and mushrooms.
05 - Add garlic powder, salt and pepper; mix well.
06 - Fill muffin cups 3/4 full. Bake 20-25 minutes until golden.
