Pecan Pie Brownie Bites (Print Version)

# Ingredients:

01 - 1/2 cup unsalted butter, melted (for brownies).
02 - 1 cup granulated sugar.
03 - 2 large eggs (for brownies).
04 - 1 teaspoon vanilla extract (for brownies).
05 - 1/2 cup all-purpose flour.
06 - 1/3 cup unsweetened cocoa powder.
07 - 1/4 teaspoon salt.
08 - 1/4 teaspoon baking powder.
09 - 1/2 cup light corn syrup.
10 - 1/4 cup brown sugar, packed.
11 - 1/4 cup unsalted butter, melted (for topping).
12 - 2 large eggs (for topping).
13 - 1 teaspoon vanilla extract (for topping).
14 - 1 1/2 cups pecan halves.

# Instructions:

01 - Mix melted butter and sugar, add eggs and vanilla. Combine dry ingredients separately, then fold into wet mixture.
02 - Fill mini muffin cups halfway with batter. Bake 10-12 minutes until mostly done.
03 - Whisk corn syrup, brown sugar, melted butter, eggs and vanilla. Stir in pecans.
04 - Spoon pecan mixture over partially baked brownies.
05 - Return to oven for 12-15 minutes until pecan layer is set and bubbly.

# Notes:

01 - Can use dark corn syrup for deeper flavor.
02 - Optional add mini chocolate chips to brownie batter.
03 - Keeps 3 days at room temperature.
