Pasta Fagioli Soup (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 cup minced onion.
03 - 2 tablespoons minced garlic (6 cloves).
04 - 1 cup minced carrots.
05 - 2 cans (15 oz each) cannellini beans, drained.
06 - 15 oz tomato sauce.
07 - 1 bay leaf.
08 - 1/2 teaspoon dried basil.
09 - 1/2 teaspoon dried parsley.
10 - 1/2 teaspoon dried oregano.
11 - 1/2 teaspoon black pepper.
12 - 1/4 teaspoon red pepper flakes (optional).
13 - 4 cups vegetable stock.
14 - 2 cups water.
15 - 1 cup (5 oz) ditalini pasta.

# Instructions:

01 - Heat oil over medium heat. Cook onions, garlic and carrots until softened, about 5 minutes.
02 - Add sauce, spices, stock, beans and water. Stir and bring to boil.
03 - Add pasta and cook for half the recommended time. Remove from heat and let stand 5 minutes.
04 - Remove bay leaf before serving.

# Notes:

01 - Best cooked on stovetop for proper pasta texture.
02 - Can add parmesan rind for extra flavor.
03 - Prep veggies ahead using food processor.
