01 - 1 lb ground beef (80% lean recommended)
02 - 1 cup fresh spinach, finely chopped
03 - 3 cloves garlic, minced
04 - 1/4 cup breadcrumbs
05 - 1/4 cup grated Parmesan cheese
06 - 1 large egg
07 - 1/2 tsp salt
08 - 1/4 tsp black pepper
09 - 1/2 tsp Italian seasoning
10 - 1 cup mozzarella cheese, cut into small cubes
11 - 2 tbsp olive oil (for cooking)

# Instructions:

01 - Combine ground beef, chopped spinach, garlic, breadcrumbs, Parmesan, egg, salt, pepper, and Italian seasoning in a large bowl. Mix gently with hands until incorporated.
02 - Take 1-2 tablespoons of meat mixture, flatten in palm, place mozzarella cube in center. Wrap meat around cheese completely, then roll into smooth ball.
03 - Heat olive oil in skillet over medium heat. Cook meatballs in batches, 4-5 minutes per side until golden brown and cooked through.
04 - Remove cooked meatballs to paper towel-lined plate to drain excess oil.
