Combine ground beef, chopped spinach, garlic, breadcrumbs, Parmesan, egg, salt, pepper, and Italian seasoning in a large bowl. Mix gently with hands until incorporated.

Take 1-2 tablespoons of meat mixture, flatten in palm, place mozzarella cube in center. Wrap meat around cheese completely, then roll into smooth ball.

Heat olive oil in skillet over medium heat. Cook meatballs in batches, 4-5 minutes per side until golden brown and cooked through.

Remove cooked meatballs to paper towel-lined plate to drain excess oil.
