Mississippi Mud Potatoes (Print Version)

01 - 6 cups potatoes, peeled and diced
02 - 1 cup cheddar cheese, shredded
03 - 3/4 cup mayonnaise
04 - 1 cup bacon, cooked and crumbled
05 - 3 teaspoons garlic, minced
06 - 1/2 cup onion, chopped

# Instructions:

01 - Preheat oven to 325°F (163°C). Lightly grease a 9x13 baking pan.
02 - In prepared baking pan, mix together diced potatoes, shredded cheese, crumbled bacon, minced garlic, and chopped onion.
03 - Add mayonnaise to potato mixture and stir until everything is evenly coated.
04 - Bake in preheated oven for about 1½ hours, until potatoes are tender and top is golden brown.
05 - Serve hot straight from the oven.

# Notes:

01 - Can substitute mayo with Greek yogurt for lighter version
02 - Add jalapeños or chili flakes for heat
03 - Great make-ahead dish
