Mediterranean Baked Salmon (Print Version)

# Ingredients:

→ Salmon

01 - 4 salmon fillets (7 oz each)
02 - 1 lemon, sliced
03 - 2 teaspoons garlic powder
04 - 2 teaspoons dried basil
05 - 2 teaspoons dried oregano
06 - 1 teaspoon dried parsley
07 - ½ teaspoon onion powder
08 - ½ teaspoon kosher salt
09 - ¼ teaspoon pepper

→ Mediterranean Topping

10 - ½ cup kalamata olives
11 - ½ cup cherry tomatoes, diced
12 - ⅓ cup feta cheese
13 - 1 tablespoon fresh parsley, chopped
14 - 1 tablespoon fresh mint, chopped
15 - 1 tablespoon olive oil
16 - Salt and pepper to taste

# Instructions:

01 - Set your oven to 400°F (200°C).
02 - In a small bowl, mix together garlic powder, dried basil, dried oregano, dried parsley, onion powder, kosher salt, and pepper. Set aside.
03 - Pat the salmon fillets dry with paper towels. Sprinkle approximately 1 teaspoon of the seasoning mixture evenly over each fillet.
04 - Place the seasoned salmon fillets in an oiled cast iron skillet. Arrange lemon slices around the salmon for added flavor.
05 - Bake in the preheated oven for 12-15 minutes, or until the internal temperature of the salmon reaches 145°F (63°C). Ensure the fish flakes easily with a fork.
06 - While the salmon bakes, combine kalamata olives, diced cherry tomatoes, crumbled feta cheese, chopped fresh parsley, chopped fresh mint, olive oil, salt, and pepper in a small bowl. Mix gently.
07 - Once the salmon is cooked, drizzle it with a bit of olive oil and top generously with the Mediterranean topping mixture. Serve immediately, optionally paired with a Mediterranean couscous salad.

# Notes:

01 - This dish can also be cooked in an air fryer at 400°F (200°C) for 8-10 minutes.
02 - Cooked salmon stays fresh in the refrigerator for up to 3 days.
03 - Pairs beautifully with a side of Mediterranean couscous salad or roasted vegetables.
