Mediterranean Chickpea Cucumber Salad (Print Version)

# Ingredients:

→ Salad Ingredients

01 - 1 can (15 oz) chickpeas, rinsed and drained
02 - 1 cup cherry tomatoes, halved or quartered
03 - 4 persian cucumbers, diced (or 1 english cucumber)
04 - ¼ cup red onion, diced
05 - ¼ cup fresh parsley, chopped
06 - 2 tablespoon fresh dill, chopped
07 - ½ cup crumbled feta cheese

→ For Dressing

08 - 1 tablespoon extra virgin olive oil
09 - 2 tablespoon white wine vinegar (or apple cider vinegar)
10 - Juice of 1 lemon (2-3 tablespoons)
11 - ½ teaspoon garlic powder
12 - ½ teaspoon salt
13 - Black pepper to taste

# Instructions:

01 - Drain and rinse chickpeas. Dice cucumber and tomatoes, chop red onion and fresh herbs. Combine in a medium bowl.
02 - Add all dressing ingredients over the salad ingredients. Toss until everything is well coated.
03 - Add crumbled feta on top and gently toss again to combine.

01 - Use canned chickpeas for convenience
02 - Crumble fresh feta block for best flavor
03 - Use fresh lemon juice instead of bottled
