Mango Chicken Curry (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil.
02 - 1 pound chicken breasts, cubed.
03 - 1 medium onion, diced.
04 - 2 cloves garlic, minced.
05 - 1 inch piece fresh ginger, grated.
06 - 1 tablespoon curry powder.
07 - 1 teaspoon ground turmeric.
08 - 1 teaspoon ground cumin.
09 - 1/2 teaspoon chili powder (optional).
10 - 1 can (13.5 oz) coconut milk.
11 - 1 cup chicken broth.
12 - 2 ripe mangoes, peeled and cubed.
13 - Salt and pepper to taste.
14 - Fresh cilantro for garnish.
15 - Cooked rice or quinoa for serving.
16 - Naan bread (optional).

# Instructions:

01 - Brown chicken pieces in oil with salt and pepper, 5-7 minutes. Remove from pan.
02 - Sauté onion 2-3 minutes, add garlic and ginger for 1-2 minutes more.
03 - Stir in curry powder, turmeric, cumin and optional chili powder. Cook 1-2 minutes.
04 - Add coconut milk and broth. Simmer with chicken 10-15 minutes until thickened.
05 - Add mango cubes and warm through 5 minutes. Adjust seasonings.
06 - Serve over rice with cilantro garnish and optional naan bread.

# Notes:

01 - Can adjust spice level to taste.
02 - Use ripe but firm mangoes.
