Rocky Road Cookies (Print Version)

# Ingredients:

01 - 1 cup cold butter, cubed.
02 - 1 cup brown sugar.
03 - 1/2 cup sugar.
04 - 2 large eggs.
05 - 1 teaspoon vanilla extract.
06 - 1/2 cup unsweetened cocoa powder.
07 - 1 cup cake flour.
08 - 1 1/2 cups all-purpose flour.
09 - 1 teaspoon cornstarch.
10 - 3/4 teaspoon baking soda.
11 - 1/2 teaspoon salt.
12 - 1 3/4 cups semi-sweet chocolate chips.
13 - 2 cups mini marshmallows.
14 - 3/4 cup cashews, roughly chopped.

# Instructions:

01 - Heat oven to 410°F. Line baking sheet with parchment paper.
02 - Cream butter and sugars 4 minutes until light. Add eggs and vanilla. Fold in dry ingredients.
03 - Mix in chocolate chips, marshmallows and cashews.
04 - Form 5-6 ounce balls. Optional: press extra chips and marshmallows on top.
05 - Bake 9-11 minutes. Press edges inward if needed. Let rest 15 minutes before moving.

01 - Uses mix of cake and all-purpose flour.
02 - Can substitute all all-purpose flour.
03 - Use light-colored baking sheet.
