Honey Chipotle Chicken Bowls (Print Version)

# Ingredients:

01 - 1 pound chicken breast, diced.
02 - 2 tablespoons olive oil.
03 - 1/4 cup honey.
04 - 2 tablespoons chipotle peppers in adobo sauce, chopped.
05 - 2 tablespoons fresh lime juice.
06 - 2 garlic cloves, minced.
07 - Salt and pepper to taste.
08 - 2 cups cooked rice.
09 - 1 cup black beans, drained and rinsed.
10 - 1 cup corn kernels.
11 - 1/2 cup cherry tomatoes, halved.
12 - 1/4 cup red onion, finely chopped.
13 - 1 avocado, sliced.
14 - 2 tablespoons fresh cilantro, chopped.
15 - Lime wedges for serving.

# Instructions:

01 - Heat oil in skillet over medium-high heat. Add diced chicken and cook 5-7 minutes until browned.
02 - Mix honey, chipotle peppers, lime juice, and garlic. Pour over chicken and simmer 3-5 minutes until thickened.
03 - Divide rice between bowls. Layer with black beans, corn, tomatoes, onion, and avocado.
04 - Top with honey chipotle chicken, cilantro, and serve with lime wedges.
