Peel and grate potatoes and onion using large holes of box grater. Drain excess liquid.

Combine potato mixture with flour, egg, salt, and pepper until well mixed.

Heat oil in skillet. Drop 2 tbsp batter per pancake, flatten slightly. Fry 3-4 minutes each side until golden.

Re-fry pancakes 30-60 seconds per side for extra crispiness.

Place on paper towels. Serve hot with applesauce or sour cream.
