01 - 3 pounds sweet potatoes, peeled and cubed

07 - 1 tablespoon fresh parsley, chopped

# Instructions:

01 - Preheat your oven to 400°F (200°C).
02 - Toss the cubed sweet potatoes in olive oil, salt, and pepper until well-coated.
03 - Spread the sweet potato cubes on a baking sheet, ensuring they're spaced apart for even roasting.
04 - Place in the oven and roast for 25-30 minutes, until the sweet potatoes are tender and golden.
05 - While roasting, melt the unsalted butter in a saucepan over medium heat. Add minced garlic and cook until fragrant.
06 - Once sweet potatoes are done, drizzle with garlic butter and toss gently to mix.
07 - Sprinkle with fresh chopped parsley and serve hot.
