French Toast Muffins (Print Version)

# Ingredients:

01 - 2 cups all-purpose flour.
02 - 1 cup granulated sugar.
03 - 2 teaspoons baking powder.
04 - 1/4 teaspoon salt.
05 - 1/2 cup unsalted butter, melted.
06 - 1 cup milk.
07 - 2 large eggs.
08 - 1 teaspoon ground cinnamon.
09 - 1/4 teaspoon ground nutmeg.
10 - 1/4 teaspoon vanilla extract.
11 - 1/2 cup granulated sugar (for coating).
12 - 1 tablespoon ground cinnamon (for coating).

# Instructions:

01 - Heat oven to 375°F. Line 12-cup muffin tin with paper liners.
02 - Whisk flour, sugar, baking powder, salt, and cinnamon in a bowl.
03 - Combine melted butter, milk, eggs, nutmeg, and vanilla in another bowl.
04 - Gradually stir dry ingredients into wet mixture until just combined.
05 - Fill muffin cups 2/3 full. Bake 20-25 minutes until done.
06 - Mix coating sugar and cinnamon. Dip warm muffin tops in mixture.
07 - Return to oven 2-3 minutes to crisp the cinnamon sugar coating.

# Notes:

01 - Can be stored 3 days at room temperature.
02 - Serve with maple syrup or whipped cream.
03 - Top with fresh berries or nuts if desired.
