Dulce de Leche Cheesecake Bars (Print Version)

# Ingredients:

01 - 2 1/4 cups graham cracker crumbs.
02 - 2 tablespoons sugar for crust.
03 - 1/4-1/2 teaspoon cinnamon.
04 - 10 tablespoons melted butter.
05 - 24 oz cream cheese, room temperature.
06 - 1 cup sugar for filling.
07 - 3 large eggs, room temperature.
08 - 1/2 cup dulce de leche for filling.
09 - 2 teaspoons vanilla extract.
10 - 2/3 cup dulce de leche for topping.
11 - 3+ tablespoons heavy cream.
12 - Fleur de sel for garnish.

# Instructions:

01 - Mix graham crumbs, sugar, cinnamon and butter. Press in greased 13x9 pan. Bake at 350°F for 10 minutes.
02 - Blend cream cheese and sugar until smooth. Add dulce de leche, eggs one at a time, and vanilla.
03 - Pour over crust. Bake 38 minutes until just set. Cool completely.
04 - Heat dulce de leche with cream until pourable. Spread over cheesecake. Chill 1 hour.
05 - Cut into 24 bars. Sprinkle with fleur de sel before serving.

01 - Use room temperature ingredients.
02 - Topping will remain soft.
03 - Can be made 2 days ahead.
