Crockpot Tortellini Sausage Soup (Print Version)

# Ingredients:

01 - 16 ounces Italian sausage
02 - 1/2 medium onion, chopped
03 - 4 cloves garlic, minced
04 - 2 medium carrots, sliced or chopped
05 - 2 sticks celery, chopped finely
06 - 1 (28 ounce) can crushed tomatoes
07 - 1 (14 ounce) can diced tomatoes with juices
08 - 4 cups chicken broth
09 - 2 (9 ounce) packages refrigerated cheese tortellini
10 - 3/4 cup heavy/whipping cream
11 - 2 cups (packed) fresh baby spinach
12 - Salt & pepper to taste

# Instructions:

01 - Sauté sausage meat and onions in a skillet for 7-8 minutes until browned, breaking up the meat. Spoon out excess fat if needed.
02 - Stir in minced garlic and cook for 30 seconds. Transfer sausage mixture to the Crockpot.
03 - Add carrots, celery, crushed tomatoes, diced tomatoes, and chicken broth to the Crockpot.
04 - Cook on low for 7-8 hours or high for 4-5 hours. For shorter cooking time, chop carrots more finely.
05 - 30 minutes before serving, add tortellini, cream, and spinach. Set heat to high and stir occasionally.
06 - Season with salt and pepper to taste before serving hot.

01 - Use ground sausage or whole sausages with casings removed
02 - Leftovers will absorb broth - add more when reheating
03 - Recipe requires a 7-quart Crockpot
