Creamy Vodka Pasta (Print Version)

# Ingredients:

01 - 12 oz penne pasta.
02 - 1 tablespoon olive oil.
03 - 2 tablespoons butter, unsalted.
04 - 2 garlic cloves, finely chopped.
05 - 1/2 teaspoon red pepper flakes.
06 - 1/4 cup good quality vodka.
07 - 14 oz crushed tomatoes.
08 - 1/2 cup heavy cream.
09 - 1/4 cup fresh grated Parmesan.
10 - 2 tablespoons fresh basil, chopped.
11 - Salt and black pepper to taste.

# Instructions:

01 - Cook penne in salted water until just tender. Save half cup of pasta water before draining.
02 - Cook garlic with butter and olive oil until golden. Add pepper flakes if using.
03 - Pour in vodka and let it bubble for 2-3 minutes to cook off alcohol.
04 - Mix in tomatoes and simmer until thickened. Stir in cream and cook until smooth.
05 - Toss pasta with sauce, adding pasta water if needed. Mix in cheese and basil.
06 - Top with extra Parmesan and basil. Serve hot.

# Notes:

01 - Add tomato paste while cooking garlic for richer flavor.
02 - Works well with rigatoni or spaghetti too.
03 - Use broth instead of vodka for alcohol-free version.
