Sweet Potato Soup (Print Version)

# Ingredients:

01 - 2 large sweet potatoes, peeled and cubed.
02 - 1 medium onion, chopped.
03 - 2 cloves garlic, minced.
04 - 4 cups vegetable broth.
05 - 1 tablespoon olive oil.
06 - 1 teaspoon ground cumin.
07 - 1 teaspoon smoked paprika.
08 - Salt and pepper to taste.
09 - 1-2 tablespoons tahini or miso paste (optional).
10 - 1 teaspoon chili flakes (optional).
11 - Fresh cilantro for garnish (optional).

# Instructions:

01 - Peel and cube sweet potatoes, chop onion and mince garlic.
02 - Cook onion and garlic in olive oil until fragrant, 3-4 minutes.
03 - Add potatoes, broth, and seasonings. Simmer 15 minutes until tender.
04 - Puree soup until smooth using immersion or regular blender.
05 - Stir in tahini or miso and optional chili flakes. Garnish with cilantro.

# Notes:

01 - Can adjust thickness with broth.
02 - Can substitute other nut butters for tahini.
03 - Keeps 3 days refrigerated.
