Creamy Radiatore Pasta (Print Version)

# Ingredients:

01 - 10-12 ounces radiatore pasta.
02 - 2 tablespoons olive oil.
03 - 1/2 medium onion, diced.
04 - 2 large garlic cloves, minced.
05 - 2 1/2 tablespoons tomato paste.
06 - 1 teaspoon dried basil.
07 - 1/2 teaspoon salt.
08 - 1/3 teaspoon red pepper flakes.
09 - 1 shot vodka (optional).
10 - 1 cup heavy cream.
11 - 3/4 cup grated Parmesan.

# Instructions:

01 - Boil pasta in salted water according to package directions, about 10-11 minutes.
02 - Cook onions in olive oil 5 minutes until soft. Add tomato paste, garlic and seasonings.
03 - Add vodka and cook 1 minute to evaporate. Pour in cream and bring to simmer.
04 - Stir in Parmesan, then add cooked pasta. Add pasta water if needed to thin sauce.

# Notes:

01 - Salt pasta water well.
02 - Cook pasta al dente.
03 - Keep some pasta water for sauce.
