Creamy Crack Chicken Soup (Print Version)

# Ingredients:

01 - 4 slices bacon, chopped.
02 - 1 tablespoon olive oil or butter.
03 - 1 medium onion, diced.
04 - 2 cloves garlic, minced.
05 - 4 cups chicken broth.
06 - 1 pound boneless chicken breasts.
07 - 8 oz cream cheese, softened.
08 - 1 cup heavy cream.
09 - 1 cup shredded cheddar.
10 - 2 tablespoons ranch seasoning.
11 - 1/2 teaspoon smoked paprika.
12 - 1 cup baby spinach (optional).

# Instructions:

01 - Crisp bacon in large pot. Remove bacon, leave 1 tablespoon fat.
02 - Cook onion and garlic in bacon fat and oil until soft.
03 - Add broth and chicken. Simmer 20-25 minutes until chicken is done. Remove and shred.
04 - Add cream cheese, cream, cheddar, and seasonings. Stir until smooth. Return chicken.
05 - Add spinach if using. Simmer 5 minutes. Top with bacon and garnishes.

01 - Can use rotisserie chicken.
02 - Freezes well up to 3 months.
