Creamy Alfredo Lasagna Soup (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 tablespoon olive oil
02 - 1 lb ground Italian sausage or ground beef
03 - 1 medium onion, diced
04 - 3 cloves garlic, minced

→ Soup Base

05 - 4 cups chicken broth
06 - 2 cups Alfredo sauce
07 - 1 (14.5 oz) can diced tomatoes

→ Pasta and Seasonings

08 - 8 lasagna noodles, broken into pieces
09 - 1 teaspoon dried basil
10 - 1 teaspoon dried oregano
11 - Salt and black pepper, to taste

→ Finishing Ingredients

12 - 1 cup shredded mozzarella cheese
13 - 1/2 cup grated Parmesan cheese
14 - Fresh parsley or basil for garnish

# Instructions:

01 - Heat olive oil in large pot over medium heat. Add ground sausage or beef, breaking apart while cooking until browned, about 5-7 minutes. Drain excess fat if needed.
02 - Add diced onion and cook 4-5 minutes until softened. Add minced garlic and cook another minute until fragrant.
03 - Add chicken broth, Alfredo sauce, diced tomatoes, basil, oregano, salt, and pepper. Bring to boil, reduce heat and simmer 10 minutes.
04 - Add broken lasagna noodles and simmer 10-12 minutes until tender.
05 - Stir in mozzarella and Parmesan cheese until melted. Garnish with fresh herbs and serve hot.

01 - Leftovers keep in refrigerator for 3 days
02 - For best results, freeze without noodles
03 - Can substitute ground turkey or chicken
