Delicious Chocolate Chip Cheese Ball (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 cup 2% cottage cheese
02 - 2 Tbsp maple syrup – I used Lakanto sugar-free syrup
03 - 1 tsp pure vanilla extract
04 - 1 1/2 cups almond flour – All-purpose flour may be used but it must be heat treated to make it safe to eat raw.
05 - 1/4 cup protein powder – I used vanilla but you can use whatever flavor you’d like.

→ Chocolate Coating

06 - 1 1/2 cups chocolate chips divided – I used Lily’s sugar-free dark chocolate chips.
07 - 1 tsp coconut oil

# Instructions:

01 - In a blender or food processor, blend the cottage cheese until it is smooth.
02 - Setting aside 1 cup of chocolate chips, stir all of the rest of the ingredients together in a medium bowl until well combined.
03 - Refrigerate for 30 minutes.
04 - Line a baking sheet with parchment paper. Use a cookie scoop to create even portions and roll them into balls.
05 - Place the cookie dough balls onto the baking sheet and put them into the freezer for at least 20 minutes.
06 - Place the remaining chocolate chips into a small, microwave-safe bowl and heat at 15-second intervals, stirring after each interval, until completely melted.
07 - Dip the cookie dough balls into the melted chocolate, coating each one in chocolate, before placing it back onto a sheet of parchment paper.
08 - Refrigerate until the chocolate hardens.
