Chicken and Sweet Potato Skillet (Print Version)

# Ingredients:

01 - 1 pound chicken thighs (or 2 breasts).
02 - 2 medium sweet potatoes, 1-inch cubes.
03 - 1 medium onion, diced.
04 - 3 cloves garlic, minced.
05 - 1 teaspoon paprika.
06 - 1 teaspoon ground cumin.
07 - 1 teaspoon salt.
08 - 1/2 teaspoon black pepper.
09 - 1/4 teaspoon chili flakes.
10 - 2 tablespoons olive oil.
11 - 1 teaspoon fresh thyme or rosemary.
12 - 1 tablespoon lemon juice.

# Instructions:

01 - Pat chicken dry, season with paprika, cumin, salt and pepper.
02 - Sear chicken 4-5 minutes per side until golden. Remove from pan.
03 - Cook sweet potatoes 7-10 minutes until starting to caramelize. Add onion and garlic, cook 2 minutes.
04 - Return chicken to pan with herbs. Cover and cook 5-7 minutes until chicken reaches 165°F.

# Notes:

01 - Cut sweet potatoes evenly for consistent cooking.
02 - Can use chicken breasts or thighs.
03 - Lemon juice optional but recommended.
