Chicken Avocado Melt Sandwich (Print Version)

# Ingredients:

01 - 2 boneless skinless chicken breasts
02 - Salt and pepper to taste
03 - 1 tablespoon olive oil
04 - 1 avocado, sliced
05 - 4 slices of cheese (Swiss, cheddar, or provolone)
06 - 4 slices of bread (sourdough, ciabatta, or your choice)
07 - 2 tablespoons mayonnaise
08 - 1 tablespoon Dijon mustard
09 - 1 small red onion, thinly sliced
10 - 1 tomato, sliced
11 - Butter or olive oil for grilling

# Instructions:

01 - Season chicken breasts with salt and pepper. Heat olive oil in skillet over medium-high heat. Cook chicken 6-7 minutes per side until fully cooked. Let rest before slicing thinly.
02 - Slice avocado and prepare cheese slices. Set aside.
03 - Spread thin layer of mayonnaise and Dijon mustard on each slice of bread.
04 - On two bread slices, layer sliced chicken, avocado, cheese, red onion, and tomato. Top with remaining bread slices, mayo side down.
05 - Heat skillet over medium heat with butter or oil. Cook sandwiches until golden brown and cheese melts, about 3-4 minutes per side, pressing gently with spatula.
06 - Remove from skillet, let cool briefly, slice in half, and serve warm.

# Notes:

01 - Can use pre-cooked or rotisserie chicken
02 - Store leftovers in airtight container
03 - Reheat in toaster oven to maintain crispiness
