Creamy Cajun Sausage Pasta (Print Version)

# Ingredients:

→ Main Ingredients

01 - 12 ounces smoked sausage (Andouille or kielbasa), sliced
02 - 8 ounces penne or rigatoni pasta
03 - 1 cup mixed bell peppers, diced
04 - ½ cup onion, diced

→ Sauce & Seasonings

05 - 2 tablespoons Cajun seasoning
06 - 1 cup heavy cream
07 - 1 cup shredded Parmesan cheese
08 - 1½ cups chicken broth
09 - ½ teaspoon garlic powder
10 - ¼ teaspoon cayenne pepper (optional)
11 - Salt and pepper to taste

→ Additional Items

12 - 1 tablespoon olive oil
13 - 1 cup fresh spinach (optional)
14 - Fresh chopped parsley for garnish

# Instructions:

01 - Slice sausage into rounds, dice bell peppers and onions, and measure out all seasonings, cream, and cheese.
02 - Heat olive oil in a large skillet or pot. Sauté sausage until browned. Remove and set aside.
03 - In the same pot, cook bell peppers and onions until softened.
04 - Add Cajun seasoning to the vegetables. Pour in chicken broth and bring to a simmer.
05 - Add pasta to the pot and cook until al dente, stirring occasionally to prevent sticking.
06 - Reduce heat and stir in heavy cream and Parmesan until melted. Return sausage to the pot and mix well. Add spinach if using.

01 - Adjust Cajun seasoning and cayenne to your preferred spice level
02 - Stir pasta occasionally to prevent sticking to bottom of pot
03 - Add pasta water if sauce becomes too thick
