Blackberry Balsamic and Brie Grilled Cheese (Print Version)

# Ingredients:

→ For Blackberry Jam

01 - 2 cups blackberries
02 - 3 tbsp balsamic vinegar
03 - 6 tbsp sugar
04 - 2 tbsp lemon juice
05 - Kosher salt, pinch

→ For Sandwiches

06 - 300g double cream brie cheese
07 - 1 tbsp chopped fresh thyme
08 - 8 slices sourdough bread
09 - Butter, as needed

# Instructions:

01 - Combine blackberries, balsamic vinegar, sugar, lemon juice, and salt in saucepan. Bring to boil, then simmer. Crush berries and cook 7-10 minutes until thickened. Cool.
02 - Slice brie into ½ inch thick slices.
03 - Heat skillet on medium heat, keeping temperature moderate to allow cheese to melt properly.
04 - Butter one side of four bread slices. Place butter side down in pan. Top with brie slices and thyme.
05 - Spread thick layer of blackberry jam on remaining bread slices. Place jam side down over brie.
06 - Butter top bread slices, flip sandwiches, and cook until golden and cheese melts.
07 - Let cool briefly before cutting in half with sharp knife.

# Notes:

01 - Jam will thicken more as it cools
02 - May need to cook in batches depending on pan size
03 - Keep heat moderate for proper cheese melting
