Quick Weeknight Beef Dinner (Print Version)

# Ingredients:

→ For the Stir-Fry

01 - 1 lb beef sirloin or flank steak, thinly sliced
02 - 2 tablespoons cornstarch
03 - 2 tablespoons vegetable oil
04 - 1 red bell pepper, sliced
05 - 1 yellow bell pepper, sliced
06 - 1 cup broccoli florets
07 - 1 carrot, julienned
08 - 1 zucchini, sliced
09 - 2 cloves garlic, minced
10 - 1 teaspoon ginger, grated
11 - 3 green onions, chopped
12 - 1 tablespoon sesame seeds (optional, for garnish)

→ For the Sauce

13 - ¼ cup low-sodium soy sauce
14 - 2 tablespoons oyster sauce
15 - 1 tablespoon honey
16 - 1 teaspoon sesame oil
17 - ½ teaspoon red pepper flakes (optional for heat)
18 - ¼ cup beef broth
19 - 1 teaspoon cornstarch (for thickening)

# Instructions:

01 - Slice the beef as thinly as possible. Toss the beef in a bowl with cornstarch, which will help create a tender texture and a slight crisp when stir-fried. Let it sit for about 10 minutes while you prep the vegetables.
02 - In a small bowl, whisk together the soy sauce, oyster sauce, honey, sesame oil, red pepper flakes (if using), beef broth, and cornstarch. This combination creates a rich, glossy sauce that coats the beef and vegetables beautifully. Set the sauce aside.
03 - Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the beef in a single layer and cook for 2-3 minutes per side until browned. Remove the beef from the pan and set it aside on a plate.
04 - Add another tablespoon of oil to the pan. Toss in the garlic and ginger, stirring quickly to release their aroma. Then, add the bell peppers, broccoli, carrot, and zucchini. Stir-fry for about 3-4 minutes, keeping the veggies crisp and vibrant.
05 - Return the beef to the pan, pouring the prepared sauce over the top. Stir everything together, ensuring the sauce evenly coats the meat and vegetables. Cook for another 1-2 minutes, allowing the sauce to thicken slightly.
06 - Remove from heat and sprinkle with chopped green onions and sesame seeds for an added layer of flavor and texture. Serve immediately over steamed rice or noodles.

# Notes:

01 - If you prefer a thicker sauce, add an extra teaspoon of cornstarch mixed with water.
02 - For a lower-sodium version, use reduced-sodium soy sauce and skip the oyster sauce.
03 - Leftovers taste great the next day—just reheat in a pan with a splash of water to keep everything from drying out.
